When you order a bespoke cake, one of the first decisions you will face is: buttercream or fondant? Both have their strengths, both look beautiful, and both can create a stunning centrepiece for your celebration. But they are very different in terms of taste, appearance, cost and practicality. Here is everything you need to know to make the right choice.

What Is Buttercream?

Buttercream is an icing made by whipping butter with icing sugar until it is light and fluffy. It can be flavoured with vanilla, chocolate, lemon, salted caramel, coffee and countless other options. There are several types of buttercream:

What Is Fondant?

Fondant is a sugar paste made from icing sugar, gelatin, glycerine and water. It is rolled into thin sheets and draped over a cake to create a perfectly smooth, clean finish. Think of it as edible fabric. Fondant allows for incredibly precise, sharp designs and is the traditional choice for formal wedding cakes.

However, many people peel the fondant off before eating. It is very sweet and has a chewy, doughy texture that not everyone enjoys.

Taste: Buttercream Wins

Let us be honest. When it comes to taste, buttercream wins hands down. A good Swiss meringue buttercream is rich, creamy and melts on your tongue. It can be flavoured with real vanilla, Belgian chocolate, espresso, pistachio, lemon curd and more.

Fondant is edible but it is essentially sugar paste. Most people find it too sweet and too chewy. At weddings, it is extremely common to see guests peel the fondant layer off and eat only the cake and buttercream underneath.

Appearance: Fondant Is More Precise, But Buttercream Is More Modern

Fondant gives you a flawless, porcelain smooth finish. If you want perfectly sharp edges, geometric patterns, or very structured 3D decorations, fondant is the best choice.

But buttercream has caught up dramatically. Modern buttercream techniques can create stunning smooth finishes, elegant textures, watercolour effects and beautiful piped flowers. The look is softer and more organic, which is why buttercream cakes are dominating social media and wedding trends right now.

Cost: Buttercream Is More Affordable

Buttercream cakes are generally cheaper because they require less preparation time. A skilled baker can ice a buttercream cake more quickly than a fondant cake, which needs to be rolled, lifted, smoothed and trimmed with precision.

As a rough guide, expect a fondant cake to cost 15 to 25 percent more than an equivalent buttercream design.

The Best of Both Worlds

Many of our most popular cakes combine both techniques. A fondant covered cake with buttercream detailing. Or a buttercream finished cake with fondant accents and toppers. There is no rule that says you have to choose one or the other.

For example, a wedding cake might have fondant covered tiers for a clean foundation, with buttercream piped flowers and gold accents. Or a birthday cake might be finished in smooth buttercream with fondant character toppers.

My personal recommendation? If you care about taste, go with buttercream. If you care about precise, architectural design, go with fondant. And if you want both, we can absolutely do that too.
